Pita Calzone... With Cheese!

You thought cheesy calzones were forever gone with the wind on your healthy eating plan, didn't you? We have good news! If hearty calzones are your true amore, check out our Pita Calzone. With Italian seasoning, fresh tomato, tofu and vegetarian cheese, this hot and cheesy calzone will make your taste buds shout, "Mama Mia." Dig in.

Ingredients

1/2 tsp. oregano
1/4 tsp. Italian seasoning
1 pita bread, approximately 6 inches (2 oz.)
1 medium fresh tomato
3 oz. soft tofu
3 oz. vegetarian cheese (soy or rice cheese)

Directions

1. Preheat oven to 375 degrees.
2. Drain tofu and coarsely mash in a small bowl.
3. Dice vegetarian cheese and tomato; mix with oregano and Italian seasoning. Stuff pita with mixture, place on baking sheet lightly coated with cooking spray and bake for 15-20 minutes, until heated through.

Makes one serving. Nutritional values per serving: 270 calories, 4.5g fat (0.0g sat), 13g protein, 45g carbohydrate, 3g fiber, 0mg cholesterol, 340mg sodium and 6g sugar.
