Most people have someone who dictates at least part of their lifestyle. Some have bosses, who dictate what time they have to come to work. Others are students, who must arrive for class at a certain hour. There is usually a dress code at work or school, and most people can't leave until someone in authority deems it time.

Nearly all of us have to live according to the rules of others. However, no one can tell you what to eat, how much to eat or when to stop eating. Those choices are yours, and yours alone. Once you adopt this premise, you'll be happier and healthier!

Cooking is both an art and a science. Using different combinations results in new flavors and textures. The more you experiment, the more fun it is! You can modify just about every recipe to suit your lifestyle and taste preferences. Lower the sodium in your diet by not adding salt, and give your taste buds a chance to experience a wider range of flavors.

Salt is an acquired taste. If you put salt on a baby's tongue, it'll make a face of displeasure! A "tired" palate needs to be revived by substituting new spices and flavors. It's similar for sugar and fat! Your palate can get used to anything. If everything you eat is salty, fatty or sweet, then here's the opportunity to liberate your taste buds and improve your health.

1. Stock the right tools. Nonstick pans are essential for healthy cooking. You don't need many pans to cook healthy. A nonstick skillet, baking sheets, nonstick bread pans and roasting pans all mean you need to add little to no fat to the recipe. Today's pans are wonderful. They are both durable and good-looking.
